Please introduce yourself!
My name is Mimi. I am only one, but I am one. I have two superpowers: I have the ability to super clean the house when someone calls and says that they’ll be dropping over in five minutes. I can drive here and there and everywhere and back to here and there and everywhere again. And again. And again.
Three words I live by – Goal, Grit and Grace. Four favorite F words: Family, Faith, Friday, and Food.
What’s the best thing about motherhood?
Being called “mom!!!!” a hundred times a day, watching cartoons over and over again, getting free foot massages from stepping on lego blocks, 5-minute showers, eating leftovers, being a referee in a wrestling match, and learning to count 1-2-3 in a stern, low voice. Above all, it’s having the worst day and having them hug you and tell you “Mommy, I love you” and needing nothing more.
As a mother, how do you strike a balance between caring for your family and working hard?
Know what matters. Know my limitations. Share the load. Don’t sweat the small stuff.
It’s a beautiful day on Sunday, what would you like see served on the dining table for lunch?
Chicken adobo, spicy gambas, garlic rice, and a bottle of Coke.
If you were to make your own burger, what would be in it?
Shredded beef, cheese, coleslaw, pineapple
What type of superpowers would you like to have?

Which song lyrics do you memorize by heart?
From “Beautiful In My Eyes” by Joshua Kadison:
You’re my piece of mind,
in this crazy world.
You’re everything I’ve tried to find,
your love is a pearl.
You’re my Mona Lisa, you’re my rainbow skies,
and my only prayer, is that you realize,
you’ll always be beautiful, in my eyes.
Which language would you like to be fluent in?
What’s the one condiment you can’t live without?
If you could take a visitor to only one place in your hometown, where would you take them?
Calea cakes and pastries!
What’s your favorite quote?
I never lose. Either I win or I learn.
If you could switch places for a day with anybody in the world, who would it be?
What’s something that you would like to unlearn?
